Garbled means cleaned and sorted. Tellicherry is a trade selection for larger berries; the size description alone does not establish a particular farm, variety or flavour strength.

The buying specification

A useful offer
has measurable details.

A bold berry is a size selection, not a complete quality specification. A useful pepper offer identifies the following measurements.

Download the grade guide ↓

Harvest & arrival

Arrival within six months of harvest depends on the spice’s harvest season and lot availability. The quotation confirms the harvest period and planned arrival window for your destination.

Bulk density

Request a 550 or 580 g/L buying basis, with the actual lot value confirmed. Density is measured separately from sieve size.

Moisture

A maximum of 12% is a common commercial reference. Set the purchase limit explicitly and check the proposed lot.

Cleanliness

Record extraneous matter, light berries, pinheads and broken berries as percentages.

Aroma & pungency

Evaluate a representative sample. Specify volatile oil or piperine analysis when the application needs it.

Food safety

Agree pesticide-residue and microbiological requirements for the destination; confirm any required treatment and post-treatment analysis.

Packing & shipment

Protect the quality.
Define the consignment.

25 kg or 50 kg lined-bag formats are common in the pepper trade. Quote the net weight, food-contact liner and outer-bag specification together.

A grade name is the starting point. The quotation should identify the actual lot, measured density, moisture, net packing and quantity allocated to the order.
